Sweet Potato Pancakes
2 c. pancake mix
2 c. whole milk
1 egg, beaten
1 c. sweet potatoes, cooked and mashed
3 tbsp. brown sugar, tightly packed
whipped cream, for garnish
cinnamon, for garnish
In a large bowl, mix together pancake mix, milk, and eggs until smooth.
Stir in mashed candied yams, 1 tbsp. melted butter, and brown sugar.
Add remaining butter to a large cast iron skillet ( nonstick will work just as well) over medium heat. Scoop ½ cup of batter into the skillet. Cook for about 3 minutes until bubbles start to form in batter and the pancake is golden underneath. Flip and repeat.
Repeat with remaining batter.
Top with whipped cream and sprinkle with cinnamon. Serve warm with maple syrup.
